Amy Gray-Barker has just turned 17 and comes from a family of food and hospitality enthusiasts. She has experience of working cafes and restaurants already but wanted to develop her skills in a different learning environment.

I was actually home schooled, but did spend some time in school where is did some catering.

I was interested in Maths and my family though I might be an Accountant!

What is your first memory of food?

I remember making pizza bases from scratch with my Granny and adding the toppings to them.

What’s your main reason for studying for your apprenticeship

I had worked in restaurants already but wanted to develop my skills and learning with The Cooking School and The Chefs’ School at The Viaduct gives me more personal help with my learning.

Who is your favourite Chef?

I like Heston Blumenthal, his experimental style of cooking is great!

Pigeon seared with leek mash and a cranberry jus – I like to eat unusual things.

What’s the best meal you have ever cooked?

I cooked steak with thrice cooked chips, portabello mushroom and wilted spinach for my mum and she said it was the best meal ever.

Where do you see yourself in 10 years?

I would like to travel a little then set up my own Gastro Pub in the Yorkshire Dales.

What’s the best bit of being an apprentice?

One on one teaching and learning more – I find this much that I am learning lots.

What do you do in your spare time to relax?

Walking my three dogs, a Husky, an Akita and a Chihuahua.

Thanks Amy and enjoy your apprenticeship!
